Unfilled torta al testo cut into wedges on a wooden board

Torta al testo

An Umbrian griddle flatbread with a lightly crisp surface and a firm, tender crumb, cut into wedges while warm.

  • Umbria

Keep the dough soft enough to roll without cracking, but firm enough to lift onto the hot testo. Dock it with a fork and use moderate heat once the bread is on the surface: the center needs time to cook before the outside darkens. Slice the warm wedges horizontally for filling.

The story behind Torta al testo

Torta al testo is an Umbrian flatbread named after the hot plate on which it cooks. It is also known locally as crescia or ciaccia. This simple version uses flour, water, olive oil and salt, without added leavener.

Prick the disc with a fork and lay it directly on the dry testo. Keep the heat moderate so the center cooks before the surface becomes too dark.
