Nonna's tips

  1. Give the loaf vertical room

This rich dough needs a deep mold. Do not replace it with a shallow 20 cm cake tin of the same diameter.

The story behind Pizza di Pasqua al formaggio

In Umbria, pizza or torta di Pasqua al formaggio is a savory Easter bread. Eggs enrich the dough, grated cheese runs through the crumb and small cubes leave pockets of cheese in each slice. This tall house loaf follows an Umbrian mixed-cheese version.
