The story behind Scrippelle ’mbusse in hot broth

Scrippelle ’mbusse belong to Teramo’s cooking in Abruzzo. These thin crepes are made with eggs, flour and water, then sprinkled with cheese and rolled. Hot broth surrounds the rolls in the bowl. A small pinch of cinnamon and nutmeg seasons this version; the broth should be clear enough to leave the crepes visible.
