Ciceri e tria with chickpeas, soft fresh pasta and golden fried ribbons

Ciceri e tria

Fresh pasta and chickpeas from Salento, with one-third of the ribbons fried in olive oil before they join the soft pasta and broth.

  • Puglia

Start the chickpeas the night before. Cut short ribbons and weigh out a third for frying; their golden edges give the dish its contrast.

Make ahead The total includes a 12-hour chickpea soak. The dough’s 30-minute rest fits into the chickpeas’ simmering time. Older chickpeas may need longer; wait until they are tender before adding pasta.

Nonna's tips

  1. The fried third

Weigh the cut ribbons before dividing them. One-third is fried; the rest cooks in the chickpea liquid. Stir the two textures together only at the end.

The story behind Ciceri e tria

Ciceri e tria is a Salento pasta-and-chickpea dish in which part of the fresh pasta is fried. The same simple dough gives two textures: tender ribbons in the chickpea broth and golden pieces with a crisp edge. Onion, celery, bay and a few tomatoes flavor this version. Keep the consistency loose enough for the pasta to move in the pan, and bring it to the table as soon as the fried tria has joined the chickpeas.
