Fave e cicorie

Silky dried-fava purée with bitter chicory and a generous finish of olive oil.

  • Puglia

Keep the greens and purée separate until serving. The fava beans should be soft enough to collapse before you blend them.

Make ahead Soak the fava beans the night before. The purée thickens as it stands; reheat gently with reserved bean water. Cook and drain the chicory separately.

Nonna's tips

  1. Reserve the bean water

Do not pour away all the cooking liquid. It lets you loosen the purée without making it oily, especially when reheating.

The story behind Fave e cicorie

Fave e cicorie pairs peeled dried fava beans with boiled chicory. It is at home across Puglia and also on the tables of Matera in Basilicata, with the sweet purée set against bitter greens.
