Raw meat carries a risk even when carefully sourced and handled. Keep it cold, prepare it promptly and serve it immediately.

Make ahead Do not chop or dress the meat in advance. Have the butcher prepare the whole cut on the day of serving and keep it at 0–4°C.

Nonna's tips

  1. Raw meat remains a risk

Lemon juice does not eliminate all harmful microorganisms. This raw preparation is unsuitable for pregnant people, older adults and people with weakened immune systems; choose a fully cooked dish instead.

The story behind Carne all’Albese

Carne cruda all’Albese belongs to the raw-meat antipasti of the Langhe. This version is chopped finely with a knife and dressed simply with oil, lemon and garlic.
