Soda water (or seltzer) is simply water that has been carbonated. In Italian cocktail culture, a "splash of soda" (spruzzo di seltz) is the finishing touch that opens up the flavors of vermouth and amari, adding refreshing effervescence to drinks like the Americano and Aperol Spritz. Historically, siphons were used to dispense it with high pressure.
