Campari Spritz

The original bitter spritz. Campari, Prosecco, and soda create a more assertive alternative to Aperol.

This is the standard spritz formula, three parts Prosecco, two of bitter and a splash of soda, with Campari in place of Aperol, which makes it drier, redder and more bitter. The choice that matters is the order: Prosecco first and Campari on top, so the heavier bitter sinks and blends with one gentle stir that spares the bubbles. Use plenty of ice, since a half-filled glass warms and goes flat fast.

Veneto

The spritz began in the Veneto under Habsburg rule, when Austrian soldiers asked for a spray of water in the local wine, and the bitters arrived in the 1920s and 1930s. In Venice the Campari version is often ordered as a spritz al bitter, drunk from one bacaro to the next at aperitivo time with a cicchetto in the other hand.
