Sgroppino

A Venetian palate cleanser of lemon sorbet, Prosecco, and vodka. Light, refreshing, and elegant.

Whisk the sorbet and vodka until smooth, then add the chilled Prosecco slowly. Aim for the texture in step 4: frothy and only just pourable. Use a hand whisk to control the consistency.

The story behind Sgroppino

Sgroppino is a Venetian tradition served between courses or as a final treat. Lemon sorbet, Prosecco and vodka give this drink its frothy texture.
