Cynar Spritz

A savory, herbal alternative to the Aperol Spritz using artichoke-based Cynar.

Swapping Aperol for Cynar turns the spritz from bright and orange to dark, herbal and gently bitter. This version is generous with the Cynar (60 ml to 90 ml of Prosecco), so the artichoke and herb notes lead, and the splash of soda keeps it long. Try the green olive garnish: its brine brings out the savory side of the amaro.

Veneto

Cynar was launched in 1952 by Angelo Dalle Molle and first produced in Padua, and in that city's aperitivo squares, Piazza delle Erbe, Piazza della Frutta and Piazza dei Signori, a spritz made with Cynar is the order for anyone who wants something darker than Aperol. It is an early-evening drink, and it always comes with something to eat.
