A spoonful of lentils, a flash of red and a wish for the year ahead: Italian New Year traditions give small, ordinary things a ceremonial role. Lentils stand for prosperity; red clothing, including underwear, is worn for luck. The pleasure lies in making the wish together. What reaches the table, and when, belongs to the household.
For an evening at home, begin with one decision: will the lentils be part of dinner, or a small extra serving around midnight? That choice gives the rest of the meal its shape. Arrange the food and glasses before the countdown, then leave yourself time to join it.
Lentils and the wish for prosperity
Lentils are a familiar good-luck food at Italian New Year. Some families serve them as a side dish, while others bring them out at midnight. Decide which moment you want before working out the portions: an accompaniment to the main course and a ceremonial spoonful after dinner are different jobs for the cook.
Give the lentils their own line on the shopping list. If you are following a recipe, keep its ingredient quantities, cooking liquid and method together. A festive name does not tell you whether a dish contains meat, and a photograph of brown lentils cannot establish where they were grown. Choose the actual recipe and ingredients you want to serve.
When joining somebody else’s celebration, ask how their evening usually unfolds. A bowl offered after dessert may be the host’s way of making the New Year wish. You can appreciate that gesture without turning the whole dinner into a test of how many customs you know.
Cotechino, zampone and the plate you choose
Sliced cotechino with lentils is a classic festive pairing. Cotechino Modena is made from pork and rind; it is sold in fresh and precooked forms. Check the product you buy before assigning its preparation to the last half-hour of the evening.
Our cotechino with lentils recipe gives the sausage and lentils their own preparation stages. Read both before deciding when to start. If you would rather serve Zampone Modena, use directions for that product, including its preparation state and the equipment it needs.
For the shopping list, write down the exact sausage, its fresh or precooked state, and the lentils as separate purchases. For serving, choose a platter or plates with room for both components. If this follows another substantial course, plan the quantity within the whole dinner. You can keep the lentil custom while choosing a meal that suits the people around your table.
Something red, worn your way
Red is a good-luck colour for the occasion, and red underwear is a familiar expression of the custom. A scarf, ribbon or another accessory is a simple way to bring the colour into your own evening. Treat the gesture lightly, leaving everyone to choose what they enjoy wearing.
If you are hosting, a small red detail at each place can carry the theme without requiring guests to arrive in a particular outfit. Use what already belongs with your table: a napkin, a place card or a length of ribbon. Keep space for the dishes and glasses first, then add the detail where it will be seen.
A toast worth preparing for
Choose the drink with the food and the people in mind. For Prosecco DOC, a roomy tulip-shaped glass and a serving temperature of 6–8°C are the recommended starting points. Our Christmas drinks and wines guide offers routes through the bottle choices; each wine keeps its own identity.
Set out water and a drink without alcohol as part of the same arrangement, so everybody has something ready for the toast. Decide who will pour and where the glasses will stand. These small jobs are easier to settle before the room turns its attention to midnight.
Give the evening a comfortable ending
Choose a sweet that fits what you have already served. Almond torrone, cut into pieces, is one possibility from the festive kitchen. It is a serving suggestion for this dinner, rather than a compulsory New Year dish. Put the serving plate and knife out with the other equipment, so dessert does not start another round of searching through cupboards.
Then make the wish. A few words, a raised glass and a shared spoonful of lentils give the evening its marker. Keep the customs that mean something to your gathering and let the rest of the celebration take its own shape.
