Nonna's tips

  1. Keep the pepper size constant

For more portions, add peppers of the same size and repeat tray loads. Do not increase the depth of the filling.

The story behind Pipi chini with bread and cheese

Pipi chini are Calabria’s stuffed peppers, cooked in a pan or in the oven with fillings that vary between households. Meat and cheese are common; this baked version combines seasoned bread, two cheeses and capers. The pepper softens around the filling while the exposed crumbs form a light crust. Serve warm with bread and a tomato salad for a simple summer meal.
