Tartufo di Pizzo with a cocoa centre

Hazelnut and chocolate gelato shaped around a soft cocoa centre and finished with a dry dusting of cocoa.

Use pure hazelnut paste, not a sweetened cocoa spread, and dextrose powder, not glucose syrup. A compressor ice-cream maker makes the two consecutive batches easier.

Make ahead Begin in the morning or the day before. Chill the cooked bases thoroughly, churn separately and allow the assembled desserts at least 4 hours in the freezer.

Nonna's tips

  1. Keep the centre enclosed

Make a continuous gelato shell around the sauce. Work on a small number at a time and return the gelato to the freezer if it becomes too soft to seal.
