Nonna's tips

  1. Keep the chickpea liquid

Reserve the cooking liquid before draining. A little stirred in at the end loosens the sauce without adding a new flavor.

The story behind Lagane e ceci, eggless Calabrian style

Lagane and chickpeas belong to the kitchens of both Basilicata and Calabria. The broad pasta strips meet soft chickpeas and their cooking liquid. This version follows an eggless Calabrian dough, finished with garlic and chili oil; Lucan versions can also use an egg-enriched dough.
