Nonna's tips

  1. Keep a level thickness

Use two 1 cm rolling guides if available. A thicker middle needs longer in the oven and makes the glaze harder to spread evenly.

The story behind Papassini

Papassini take their name from papassa, the Sardinian word for raisins. Recipes vary across the island, including versions enriched with grape must syrup. This almond-and-lard dough makes firm diamond-shaped cookies beneath a thin white icing.
