Food-grade almond extract
Food-grade almond extract brings almond aroma to baking in a small measured dose. For papassini, weigh it with the dough ingredients before shaping the cookies and preparing their icing.
- Form
- Commercial food-grade liquid almond extract.
- Recipe use
- A small addition to papassini dough.
- Measure
- Weigh the amount given in the recipe.
Add the measured extract
Place a small bowl on scales suited to the recipe quantity and weigh the extract. Add it at the stated mixing stage so it is distributed through the dough. Keep the bottle and its ingredient label beside you while setting out the ingredients.
Almond aroma in papassini
Papassini combine chopped almonds, raisins and a small amount of almond extract in the cookie dough. The extract joins the dough ingredients; the powdered sugar and pasteurized egg white are reserved for the icing.
From dough to decorated cookies
Shape the papassini to the recipe’s dimensions, bake them and let them cool before icing. The extract is already in the dough. Prepare the icing separately and use the recipe’s measured ingredients for that stage.
Cook with it
Choose an extract intended for baking
Look for a commercial food-grade almond extract with a clear ingredient label and baking directions. Check its carrier and formulation before use. A bottle labeled almond flavoring or aroma can have a different formulation from an extract. Keep the exact product name with your baking notes.
Close the bottle after weighing
Follow the product’s storage instructions and date. Close the cap after pouring, keep the neck clean and retain the original label.
