Make ahead Slice and cook the potatoes close to serving. The soft centers and freshly browned surfaces are best straight from the skillet.

Nonna's tips

  1. Keep the slices together

Use a deep pan with a lid and keep the potatoes overlapping. Frequent stirring breaks the slices and works against the soft, lightly clinging texture. For more portions, repeat the same pan load.

The story behind Patate ’mpacchiuse with Tropea onion

Patate ’mpacchiuse are a potato side dish from the Cosenza area of Calabria. The slices soften together rather than remaining separate like fries. Red onion cooks between the overlapping rounds, and the final uncovered stage gives the lower surfaces irregular golden patches. Sila potatoes and Tropea onions bring the dish close to its Calabrian roots.
