Erbazzone reggiano with spinach filling between thin golden pastry sheets

Erbazzone reggiano

A thin, crisp pastry enclosing spinach, spring onions, pancetta and Parmigiano Reggiano.

  • Emilia-Romagna

Squeeze the cooked spinach firmly and cool the filling before it meets the pastry. The top sheet should be thin and gently wrinkled, with plenty of fork holes for steam.

Make ahead The filling can be prepared ahead and refrigerated after cooling. Bring it together with the parsley and cheese before assembling, and allow the finished tart 15 minutes to settle before cutting.

Nonna's tips

  1. Dry the greens thoroughly

A watery filling softens the bottom pastry. Squeeze the spinach before chopping, then stir it in the pan until no liquid pools around it.

The story behind Erbazzone reggiano

Erbazzone is Reggio Emilia’s savory greens tart. Thin pastry surrounds a filling of leafy greens, spring onions and Parmigiano Reggiano, with pancetta lending depth to this version.
