Nonna's tips

  1. Keep the crepes thin

Stir the batter before each ladleful. A larger batch needs more crepes and baking dishes, rather than a thicker layer of batter in the pan.

The story behind Crespelle alla valdostana

Ham, Fontina and béchamel turn thin crespelle into a rich baked first course from the Valle d’Aosta. The filling melts inside the folded crepes while the sauce keeps their edges soft.
