Briefly moistened freselle meet cherry and datterino tomatoes, buffalo bocconcini and thin slices of Salame Felino.

Our version uses freselle, one of the consortium’s alternatives to pan biscotto. The cherry and datterino tomatoes weigh 400 g together; the recipe does not divide that weight. We use black pepper for the source’s unqualified pepper.

Method

  1. Break the freselle into rough pieces. Dip them in cold water for only one or two seconds, drain, and arrange on a plate while still crisp.

  2. Wash and dry the cherry and datterino tomatoes, halve them, and add them to the freselle with the corn. Dress with extra-virgin olive oil and salt.

  3. Slice the Salame Felino thinly and halve each slice. Add it with the buffalo bocconcini and torn basil leaves.

  4. Finish with a drizzle of extra-virgin olive oil and freshly ground black pepper, then serve. Add the salame at the last moment.
