Method

  1. Clean the mixed salad leaves and baby spinach. Use a vegetable peeler to cut the young carrots into ribbons and add them to the leaves.

  2. Boil the asparagus and cut the spears in half lengthwise. Add them to the salad with the peeled fava beans.

  3. Cut the Salame di Varzi DOP into small cubes and add it to the salad.

  4. Emulsify the extra-virgin olive oil and lemon juice to make a citronette, then dress the salad.
