A fine starch for the pastry shelf

Potato starch is a very fine powder used in cake batter, for thickening and as a measured dusting ingredient.

Potato starch is ready-to-use starch rather than a flour made from the whole potato. Its fine powder blends with flour in a cake mixture and can also thicken creams and sauces.

Measure each use separately

Sift the batter portion with the other dry ingredients. Keep the rolling-board allowance aside and use only enough to release the marzipan; extra powder on the board is not an extra addition to the batter.

In the Bergamo dome

Polenta e osei dolce combines potato starch with wheat flour in its baked base. A separate working portion keeps the marzipan from sticking during rolling.

For mixtures and sauces

Add it to cake batter as directed. When using it to thicken a sauce, disperse the measured starch in cold liquid before adding it to the hot mixture, following the recipe.

Read the starch name

Choose a product labeled fecola di patate or potato starch. Check ingredients and allergen information on the actual pack. Cornstarch and wheat starch are different products.

Keep the powder dry

Close the pack after use and store in a cool, dry place. Follow its date and storage instructions, and use a clean, dry spoon.

Questions worth asking

Is potato flour the same thing?

Choose the starch named on the pack. A whole-potato flour is a different ingredient.

Should I put the dusting allowance into the cake?

Keep the two allocations separate: one belongs to the batter and one to the rolling surface.
