Fruit with a sharp edge

The apple pieces remain visible in mostarda di mele. Preserved fruit supplies sweetness, while mustard seasoning brings its characteristic heat. Apples may be cut into thin slices or larger wedges, depending on the preparation.

In Mantuan pumpkin tortelli, chopped mostarda joins pumpkin, crushed amaretti and grated hard cheese. The fruit pieces become part of the filling; their sweetness and mustard flavour sit alongside the pumpkin and cheese.

Drain, weigh and chop

Buy ready-made apple mostarda for this filling. Lift the fruit from its syrup, let excess syrup drain away, then weigh 90 g. Chop the fruit finely enough to spread evenly through the pumpkin mixture.

Keep the syrup out of the measured filling. The pumpkin mixture should hold its shape when spooned onto the pasta; follow the tortelli recipe’s instructions for chilling and any small breadcrumb adjustment.

At the Mantuan table

Mostarda di mele has a clear place in Mantuan pumpkin tortelli. Apple mostarda also accompanies boiled meats, roasts and soft or mature cheeses. These uses call for preserved apple fruit, with its sweet and sharp character.

A small amount through the filling

Our four-portion tortelli recipe uses 90 g drained apple mostarda with 300 g cooked pumpkin, 75 g amaretti and 80 g grated Grana Padano in the filling. Chop the fruit finely, then mix it evenly rather than leaving a large piece in a single tortello.

At the table, apple mostarda can also sit alongside boiled meat, roast meat or cheese. The preserved fruit and mustard seasoning provide the contrast.

Look for the apple pieces

Choose mostarda di mele with apple slices or wedges and read the full ingredient list. The product should have the apple-fruit form required for the filling. Check the stated ingredients and flavouring rather than choosing by the English word mustard alone.

A mixed-fruit mostarda has a different fruit composition. For these tortelli, keep the specified apple form and the drained-fruit weight.

Follow the jar’s directions

Follow the storage conditions and the after-opening directions on the jar you buy. Use clean utensils to lift out the fruit and close the jar after use. Once it is mixed into the filling, follow the recipe’s handling directions.

Questions worth asking

Is apple mostarda a smooth mustard spread?

Apple mostarda contains preserved apple pieces with mustard seasoning. Use that fruit preparation for the filling, keeping the apple pieces and their drained weight.

Does 90 g include the syrup?

In our tortelli recipe, 90 g means the drained apple fruit. Weigh it after lifting it from the syrup, then chop it.

Can I use mixed-fruit mostarda?

This tortelli recipe specifies apple mostarda. A mixed-fruit jar changes the fruit composition, so keep the named apple form for this version.

How finely should I chop the fruit?

Cut the drained fruit into small pieces that can spread evenly through the pumpkin mixture, so each tortello gets some of the apple and mustard flavour.
