An almond note in the dough

In the ricciarelli recipe published by Visit Tuscany, bitter almond extract joins almond flour, vanilla and orange zest.

Moulinex also uses it in its amaretti, adding the extract with the ground almonds after beating the egg whites and sugar. These are two practical ways to bring the flavoring into almond cookies.

Measure into the mixture

Visit Tuscany’s ricciarelli use one teaspoon; Moulinex’s amaretti use two drops. Those measures belong to their respective recipes. Follow the recipe and the directions for your particular extract rather than converting drops into teaspoons.

With almonds, vanilla and citrus

In Juls’ Kitchen’s ricciarelli, the extract is folded into the egg-white mixture with almond flour, powdered sugar, vanilla and grated orange zest. The dough then rests overnight in the refrigerator. The flavoring is one part of this version’s aromatic mixture, alongside the almonds and citrus.

Choose the named ingredient

Look for the ingredient form your recipe requests and read the bottle’s ingredient list and dosage. An almond flavoring name alone does not tell you whether the product is the bitter almond extract called for in the ricciarelli recipe.

Follow the bottle

Nielsen-Massey advises storing its flavor extracts in an airtight container at room temperature, away from direct heat and sunlight. For another formulation, use its own storage directions and best-before label.

Questions worth asking

Is it the same as almond flour?

No. Both recipes list ground almonds and the extract separately: the almonds form part of the dough, while the extract is added as a measured flavoring.

How much should I use?

Use the quantity given by your recipe and check the bottle’s directions. The teaspoon in Visit Tuscany’s ricciarelli and the drops in Moulinex’s amaretti are not a general conversion.

Can I choose any almond aroma?

Check the exact product. Compare the ingredient list and form. Paneangeli’s almond extract and liquid almond aroma are distinct products; neither is named bitter almond extract.
