Smooth apricot jam
Smooth apricot jam makes a thin, even glaze for babà. Choose a cooked, sweetened preserve and sieve it before warming with the water specified in the recipe.
- Form
- Cooked apricot preserve, smooth or passed through a sieve.
- Use
- A brushed finishing glaze for cooled babà.
Sieve, warm and brush
Pass the preserve through a sieve to remove pieces that would interrupt the coating. Warm it gently with the recipe’s measured water, stirring until it is even and fluid enough to brush. Do not judge the dilution by the consistency of cold jam alone.
Let the soaked babà drain and cool before brushing. Apply a thin coat across the surface rather than leaving thick pools of preserve around the base.
Apricot in a thin finishing layer
The apricot finish on babà is a glaze rather than a thick filling. A smooth preserve spreads evenly over the curved pastry, giving a fine layer without lumps of fruit. Smooth apricot preserves are made for pastry use as well as spreading and filling. Their fruit content and sweetness vary by product. Choose the cooked preserve for this job, keeping it distinct from raw apricots, unsweetened fruit purée or an apricot spirit.
Keep the glaze light
Serve the babà after glazing, with the apricot spread over the surface in a restrained layer. The pastry already holds its soaking syrup; the jam supplies a finishing coat rather than another heavy spoonful of filling.
Look for a smooth preserve
Look for confettura di albicocche liscia, or choose an apricot preserve that can be sieved. Read the fruit and sugar ingredients and the intended use. A preserve with large pieces needs preparation before glazing; a fruit purée is a different product, even when it looks smooth.
Follow the opened-jar directions
Follow the package’s storage directions before and after opening, including any refrigeration instruction. Take out the amount needed with a clean spoon and close the jar. Prepare the diluted glaze for the recipe rather than pouring unused glaze back into the original preserve.
