Montasio DOP is a mountain cheese produced exclusively in specific provinces of Friuli-Venezia Giulia and Veneto, at elevations that reflect the Alpine and pre-Alpine character of the production zone. This semi-hard to hard cheese is made from cow's milk and available in three main versions: Montasio Fresco (fresh, aged 60-120 days), Montasio Mezzano (medium-aged, 4-10 months), and Montasio Stagionato (aged, 10-18 months or longer). Montasio represents centuries of Alpine cheesemaking tradition in Friuli-Venezia Giulia and Veneto, with production methods documented since the Middle Ages. The cheese's name derives from the Montasio massif in the Julian Alps, where the tradition of producing this mountain cheese developed. Historical records from the 13th century document the production of cheeses in the Montasio area, where the high-altitude pastures and cool climate created ideal conditions for cheesemaking. The tradition of producing Montasio in mountain dairies during summer months, when cattle graze on alpine meadows, became central to the cheese's character, with the high-altitude production creating flavors that reflect the alpine terroir.
