Coarsely ground beef is the principal meat in the Academy’s traditional ragù alla bolognese recipe.

At the table

The Academy’s recipe pairs ground beef with a separate ingredient, fresh pork pancetta, then vegetables and tomato. Its allowed mixed-meat variant is another option, not a reason to call every ground-meat sauce the same recipe.

Tell the butcher which ragù you are making and ask for the grind the recipe specifies.
