Durum wheat grains
Durum wheat grains are the intact culinary grain rather than flour or semolina. In crapiata they add a grain component among the legumes; prepare them separately before they join the soup’s later cooking stage.
- Form
- Intact dry durum wheat grains for cooking.
- Distinct from
- Semolina, flour, bulgur and other cereal species.
Prepare the grains on their own schedule
Rinse the grains and follow the package’s preparation directions. Keep their soaking or preliminary cooking separate from the dry legumes. Add them at the stage given in the crapiata recipe so the grains become tender without spending the full legume cooking time in the pot.
Check the center of a grain before serving and adjust the liquid as needed. The recipe’s practical sequence and the actual product’s instructions work together; flour or semolina cannot be used as a direct substitute.
Grains, not a milled ingredient
Durum wheat can reach the kitchen as a grain or as a milled product. The intact grains are elongated, with a crease along the seed; flour and semolina no longer have that whole-grain shape. Farro and barley are separate ingredients, even when they appear beside wheat on a cereal shelf. A named cultivar such as Senatore Cappelli is one example of durum wheat sold in grains. It does not make that cultivar a requirement for every mixed legume soup.
Distribute them through the soup
Stir the tender grains through the beans and vegetables before dividing the soup into bowls. They should be a clear part of the mixture rather than a separate mound on top. Finish with the olive oil in the recipe.
Cook with it
Read both the cereal and the form
Choose food-grade grano duro in chicchi for cooking. Check the cereal name as well as the word grains: wheat, farro and barley are not interchangeable identities. A packet of semola, flour or broken processed wheat is not the intact grain described here.
Keep the dry grains protected
Close the dry product securely and follow its storage directions and date. Use a clean container if transferring it from the bag, retaining the product label. Refrigerate soaked or cooked grains promptly and use the recipe’s make-ahead guidance for prepared food.
