Goose meets pork. In Mortara, a Lomellina town in Lombardy's Po Valley, this combination creates something unprecedented: salami unlike any other Italian salumi. Renaissance records document goose salami production here, with butchers developing techniques for combining goose meat with pork fat—rich goose flavor meeting pork's texture and preservation qualities. The practice became particularly associated with Mortara, where the town's Po Valley position created conditions ideal for both goose farming and salami production. By the 19th century, Salame d'oca di Mortara had earned recognition throughout northern Italy for its distinctive flavor and unique composition. The 1998 IGP designation protects production in Mortara and surrounding Lomellina areas, acknowledging that goose plus pork creates characteristics that distinguish this salami from all others.
