Grains inside the filling

Pastiera brings cooked wheat together with ricotta, eggs and candied fruit inside a shortcrust shell. The wheat remains a separate ingredient from the flour in the pastry: it gives the filling its grain texture. Ready-cooked grano cotto makes this stage accessible without starting with dry grain.

In our pastiera, the measured wheat goes into a saucepan with milk, butter and sugar. Stir until the mixture is creamy, then let it cool before combining it with the remaining filling ingredients. Keep the kernels whole for the texture used in the recipe.

Start with the cooked grain

Open the jar and weigh the quantity required by the recipe. Add that weighed grain to the milk mixture and stir during cooking so the filling thickens evenly. Let it cool fully before adding the eggs and ricotta. Keep the remaining plain grain separate from the finished filling.

A grain for the Neapolitan Easter table

Cooked wheat belongs to the filling of Naples’s Easter pastiera, alongside ricotta, eggs, candied fruit and orange-blossom aroma. A jar labeled grano cotto per pastiera supplies the prepared grain for that filling.

Leave room for the grain

Fold the cooled grain mixture into the filling gently. The visible kernels sit among ricotta and candied peel beneath the pastry lattice. Serve the finished pastiera according to the recipe’s cooling and refrigerated-storage directions.

Read the form before the weight

Look for plain ready-cooked wheat sold for pastiera, rather than dry wheat, flour or a finished sweet filling. Check the ingredients and allergens on the pack: water, salt or an acidity regulator may accompany the wheat. Compare the pack’s net quantity with the amount you need and retain its storage instructions.

Follow the opened jar’s directions

Follow the jar’s directions and date before opening. Once opened, refrigerate the remaining wheat as directed on the pack and use it within that producer’s stated time. Use a clean utensil to take out the grain and close the container promptly. Keep plain leftovers separate from anything mixed with milk or eggs.

Questions worth asking

Can I measure dry wheat in place of the jarred grain?

Use the ready-cooked form for this recipe. Its weight is the cooked ingredient amount; dry grain needs a different preparation and weight.

Should I drain or rinse the grain first?

For our pastiera, weigh the ready-cooked wheat directly from the jar. There is no draining or rinsing step in this preparation.

Is cooked wheat gluten-free?

No. Wheat contains gluten. Check the complete product declaration for any additional ingredients and allergens.
