The Sila plateau rises like an island in the sky—a vast expanse of high-altitude grasslands in central Calabria where elevations range from 1,200 to 1,900 meters, creating a microclimate so distinct that cattle raised here develop characteristics impossible to achieve elsewhere. The Sila has been a center of cattle raising for centuries, with its cool climate, abundant water sources, and rich pastures creating optimal conditions for beef production. Throughout the medieval period, the Sila's pastoral economy was based on extensive grazing, with cattle herds moving across the plateau's grasslands during the summer months, benefiting from the diverse forage that includes native grasses, wild herbs, and mountain flowers. The 19th and early 20th centuries saw the development of more structured pastoral practices, with local farmers establishing herds that grazed on the Sila's extensive pastures, with the high-altitude production and traditional methods creating meat of distinctive character.
