Cooked peeled chestnuts
Cooked peeled chestnuts give calzoncelli a soft, substantial filling. Choose plain chestnuts that are already tender, with both the hard shell and the inner skin removed.
- Form
- Cooked chestnuts, peeled and unsweetened.
- Texture
- Tender enough to pass through a potato ricer.
- In Lucanian pastry
- A chestnut and chocolate filling for calzoncelli.
Make a smooth filling
Check for remaining pieces of shell or inner skin, then pass the tender chestnuts through a potato ricer or mash them thoroughly. Mix with melted chocolate and the other filling ingredients as directed by the calzoncelli recipe. The mixture should be cohesive enough to portion onto the pastry without running toward the edges.
Chestnuts at the Lucanian pastry table
Calzoncelli di castagne bring cooked chestnuts and chocolate together inside a thin pastry shell. The chestnuts are mashed before the other filling ingredients are mixed in, giving the center its body. Cooked peeled chestnuts make that preparation possible without treating raw fruit as a ready filling. Plain steamed or boiled chestnuts suit this use. Chestnut flour, sweetened chestnut spread and candied marrons have different textures and proportions of moisture or sugar. For a filling, choose by preparation and ingredients before considering a named growing area.
Keep the chestnut center distinct
Let the filling cool before enclosing it in the pastry. Leave a clean border so the dough seals around it. Broken cooked chestnuts are useful here: once mashed, their original shape matters less than their tenderness and plain flavor.
Cook with it
Read beyond the word chestnut
Look for cooked, peeled chestnuts with no syrup or added sweet filling. Check the ingredient list and purchase weight: shell-on raw chestnuts include material that will be discarded. For pastry, a plain cooked product is easier to measure consistently than sweetened purée.
Follow the cooked product’s label
Keep an unopened prepared pack as its label directs. After opening, follow its refrigeration and use instructions and keep the chestnuts covered. A shelf-stable sealed pack and loose cooked chestnuts have different storage requirements.
