The story

What you're tasting

Stracciatella is Puglia's signature fresh cheese, the creamy, stringy interior of Burrata. This soft, fresh cheese is made from stretched curd (pasta filata) that is torn into shreds (stracciatella means "little rags" in Italian) and mixed with fresh cream, creating a delicate, creamy texture and milky flavor that makes it ideal for immediate consumption. The cheese is traditionally the filling inside Burrata, though it is also sold separately as a fresh cheese.

Stracciatella represents centuries of Puglia dairy tradition, with production methods documented since the early 20th century. The cheese's name derives from "stracciatella," meaning "little rags" in Italian, referring to the torn, shredded appearance of the stretched curd that is mixed with cream. Historical records from the early 20th century document the production of fresh stretched-curd cheeses in Puglia, where the rich pastures and dairy traditions created ideal conditions for cheesemaking. The tradition of producing Stracciatella in Puglia became central to the cheese's character, with the distinctive terroir of the area creating flavors that reflect the Puglia landscape. The cheese gained particular importance in Puglia, where it became an essential component of local cuisine and a symbol of Puglia dairy tradition, particularly as the filling inside Burrata. The 20th century saw the formalization of production methods, with local cheesemakers establishing consistent techniques for creating the fresh cheese that would become Stracciatella. Today, Stracciatella stands as a symbol of Puglia cheesemaking excellence, with production centered in the region while maintaining the traditional fresh-cheese methods and delicate character that have defined it for over a century.

The making

How it's made

Stracciatella production follows traditional fresh-cheesemaking methods, beginning with fresh, whole cow's milk from Puglia. The milk is heated in traditional copper cauldrons and coagulated using calf rennet, creating a firm curd that is cut into pieces to expel whey. The curd is then heated to approximately 38-42°C while being continuously stirred, a process that further expels whey and prepares the curd for stretching. The curd mass is then lifted from the whey and placed in a hot water bath, where it is worked and stretched by hand (pasta filata method), creating the characteristic smooth, elastic texture. The stretched curd is then torn into shreds (stracciatella) and immediately mixed with fresh cream, creating the delicate, creamy texture and milky flavor that characterizes Stracciatella. The cheese is then packaged fresh and consumed immediately, typically within hours or days of production. The entire process, from milk to finished cheese, typically takes just a few hours, with the finest examples consumed within hours to capture the delicate, milky flavor and creamy texture at their peak. The fresh nature of Stracciatella means it does not undergo any aging process, remaining soft and perishable, which contributes to its delicate character and the need for careful handling and quick consumption. The finest examples showcase the pure, delicate flavor of high-quality cow's milk combined with fresh cream, with a soft, creamy texture and clean, fresh finish that makes Stracciatella ideal for immediate consumption.

Stracciatella is essential to Puglia cuisine, particularly in the region. It represents the region's commitment to exceptional fresh cheesemaking and the daily dairy traditions of southern Italy.
