Italy's smallest region, Molise, developed its own pressing tradition. For centuries, local butchers have produced pressed salami using methods adapted to mountain climate and agricultural character. Sixteenth-century records document pressed salami production here, with producers developing methods for creating distinctive shapes and textures. The pressing technique, combined with Molise's seasoning traditions, created salami that looked different and tasted different. By the 19th century, Soppressata Molisana had earned recognition throughout central Italy for its unique shape and regional character. While not formally protected, it represents important Molisana heritage, with traditional methods preserved by artisanal producers who maintain the pressing technique and regional character.
