Sixteenth-century records document salami production here, with producers developing methods that work with warm, dry conditions rather than against them. Local herbs and spices became signatures—aromatic Mediterranean flora influencing culinary traditions. The practice became particularly associated with Salento, where aromatic herbs permeate both landscape and cuisine. By the 19th century, Salame Leccese had earned recognition throughout southern Italy for its distinctive flavor and Mediterranean adaptation. While not formally protected, it represents important Pugliese heritage, with traditional methods preserved by local artisanal producers.
