The ingredient

Boned, rolled veal head meat, ready for cooking.

Testina is meat removed from the calf’s head, including cheek and tissues that become gelatinous when cooked. Boned and rolled describes the butcher’s preparation, not a guarantee that it is already cooked.

In the kitchen

Buy the cleaned, boned roll and follow its cooking directions. In mixed bollito, cook it in its own pot of broth until tender all the way through; remove non-edible ties before serving.

Context

Testina is a distinct component of Piedmontese bollito. It is cooked separately from the main beef cuts to keep its fat and cooking liquid apart.

At the table

The eight-person mixed bollito uses 500 g of prepared testina in a separate 3 L portion of broth. Slice the tender roll for serving, without treating the broth or ties as edible yield.

Choosing it

Specify veal head meat, boned and rolled, ready to cook. Confirm whether the product is raw, partly cooked or fully cooked: these states need different directions. It is not veal brain or a belly pocket.

Keeping it

Store chilled according to the supplied directions and use-by date. Keep a raw roll separate from cooked food; use clean utensils after cooking.

Questions worth asking

Does prepared mean ready to eat?

No. Here it means boned and rolled by the butcher, ready to cook. Check the actual product state.

Is testina the same as cervella?

No. Head meat and brain are different ingredients.
