Puntarelle

Puntarelle are the elongated central shoots of catalogna chicory, eaten raw or cooked.

Try it in the kitchen

Dress a puntarelle salad with olive oil, garlic and anchovies. Keep the sliced shoots visible and serve the salad alongside cooked beans, letting the dressing connect the two dishes.

The shoots at the centre

Look for the central shoots when buying puntarelle. The Puglia atlas describes Molfettese as a particular local type; that name should not be applied to every generic bunch of puntarelle.
