Coffee ready to pour

Prepared long coffee is the brewed liquid measured for caffè alla valdostana, preferably made by infusion.

For an infusion, ground coffee stays in contact with hot water before the drink is separated from the grounds. A French press is one way to prepare it; choose a grind suited to that method.

Brew, then measure

Prepare the coffee using the chosen brewer’s directions. For a French press, allow the infusion to finish and lower the filter slowly. Pour the brewed liquid away from the grounds and measure the amount needed.

For the shared coppa

Hot long coffee joins grappa, sugar and citrus peel in caffè alla valdostana. Keep the original per-coppa quantities and use separate original-size batches when making more.

Keep the vessel size fixed

Scaling the recipe increases the total ingredients, not the amount to heat or flame in one coppa. Follow the recipe’s separate-batch and vessel instructions for every round.

Choose for the brewing method

Buy coffee ground for infusion or have beans ground appropriately. Measure the dry grounds as directed for your brewer, then measure the finished coffee separately for the recipe.

Prepare it near serving

Brew close to the time the drink is assembled. Pour French-press coffee out after filtering rather than leaving the finished drink sitting on the grounds.

Questions worth asking

Is the listed amount dry coffee?

It is the volume of prepared coffee after brewing and separating the grounds.

Can I double the liquid in one coppa?

Use the original-size batches and suitable coppe specified in the recipe, repeating them separately.
