Grappa di Barolo emerged from Piedmont's Langhe hills, where Barolo producers sought to honor every part of the Nebbiolo grape. The tradition of distilling Barolo pomace dates to the 19th century, when estate producers transformed the remains of their prized wines into a spirit that captured Nebbiolo's aristocratic character. The practice gained prominence in the 20th century as Barolo's international reputation grew, with producers like Giacomo Conterno, Bartolo Mascarello, and Bruno Giacosa creating grappas that reflected their winemaking philosophy. The 1989 establishment of the Indicazione Geografica (IG) designation for Grappa di Barolo codified production standards, requiring that the grappa be made exclusively from Nebbiolo pomace used in Barolo DOCG production. This regulation ensures that Grappa di Barolo represents the finest expression of Nebbiolo distillation, with the pomace sourced from the same historic crus that produce Italy's most collectible wines. Today, Grappa di Barolo is among Italy's most prestigious spirits, with producers crafting expressions that range from fresh and floral to deeply aged and complex, each reflecting the terroir and artistry of the Langhe.
