Grappa di Amarone emerged from Valpolicella's winemaking tradition, where producers of Amarone della Valpolicella DOCG sought to honor the pomace from their prized dried-grape wines. The appassimento process—drying grapes for 100-120 days before pressing—concentrates sugars and flavors, creating wines of exceptional richness. The pomace from these dried grapes retains intense aromatics and character, which distillers transform into grappa that reflects Amarone's opulent nature. The tradition gained prominence in the 20th century as Amarone's international reputation grew, with producers like Allegrini, Masi, and Quintarelli creating grappas that captured the essence of their wines. The 1989 establishment of the Indicazione Geografica (IG) designation for Grappa di Amarone codified production standards, requiring that the grappa be made exclusively from pomace of grapes used in Amarone della Valpolicella DOCG production. This regulation ensures that Grappa di Amarone represents the finest expression of dried-grape distillation, with the pomace sourced from the same vineyards that produce Italy's most celebrated passito wines. Today, Grappa di Amarone is among Veneto's most prestigious spirits, with producers crafting expressions that showcase the region's unique winemaking heritage.
