Kernels, not maize flour
The Felino consortium’s Acquasale lists corn alongside tomatoes, buffalo-mozzarella bocconcini and Salame Felino. Valfrutta’s Italian recipe combines maize with curly endive, beetroot and muesli in a salad; its recipe magazine also gives cold pasta, soup and quiche examples. These are uses of kernels, not cornmeal or maize flour.
