Prepared lampredotto with broad folds in a shallow ceramic dish.

Cleaned and blanched beef lampredotto

Lampredotto is beef abomasum, the fourth stomach compartment. For the Florentine sandwich, buy it already cleaned and blanched, ready for the recipe’s simmer in vegetable broth.

Cut
Beef abomasum.
Starting state
Already cleaned and blanched.
Recipe use
Simmered in broth, then sliced for a sandwich.

Begin with the prepared cut

Ask the butcher for plain lampredotto already cleaned and blanched for further cooking. Confirm its preparation state before purchase. This ingredient starts after that initial preparation; use the broth and simmering method in the recipe rather than attempting to clean an unprepared stomach at home.

A Florentine offal ingredient

Lampredotto is the abomasum used in Florence’s brothy, filled rolls. It is a specific stomach compartment. Buying a pack labeled only as generic tripe does not establish that it contains the cut needed for this dish.

Simmer, slice and fill

Cook the prepared piece in the recipe’s vegetable broth until tender, then lift it out and cut it into thin strips. Keep some broth for moistening the roll as directed. Add the measured salsa verde and serve the filled sandwich promptly.

Check the cut and the pack

Ask specifically for beef abomasum and check that the product is plain and intended for further cooking. A finished lampredotto dish with sauce is a different preparation. Follow any instructions on the pack, and make sure the starting state matches the recipe before using its cooking time.

Keep the prepared meat chilled

Keep the product refrigerated, following the butcher’s or manufacturer’s instructions and its use-by date. Keep it covered and separate from ready-to-eat foods. Follow the pack’s directions after opening; the initial blanching does not establish a new storage life.
