The flesh of the wing
Fine strands give skate its distinctive texture.
A skate wing contains flesh around a fan of cartilage. Removing the skin and lifting away the meat gives pliable, uneven fillets with visible lines of fiber. The ready flesh can be portioned for frying without carrying a stiff central structure into the dish.
