A mix without a fixed recipe

The Varzi consortium’s Spring Salad lists 150 g for mixed salad and baby spinach together, without giving a split or defining the mix. The recipe washes the leaves before combining them with salame, fava beans, asparagus and carrots. Treat “mixed salad leaves” as a broad ingredient category, not a prescribed blend or a replacement for the separately named baby spinach.
