Preparazione

  1. Brown the three meats in olive oil with the soffritto, add the wine, and braise gently until tender and the pan is nearly dry, about 40 minutes.

  2. Grind the contents of the pan twice, until fine. Beat in one egg, the Parmigiano, lemon zest, nutmeg, and salt. Chill 30 minutes; the filling should mold like marzipan.

  3. Rinse the olives of brine and pat dry. Widen each cavity gently with a pinky or the handle of a teaspoon.
