A Tuscan stew with its sauce

For cinghiale in umido, the meat is marinated with red wine, vinegar, vegetables, whole spices and thyme. Brown the drained pieces with olive oil, garlic and freshly chopped vegetables, then cook them covered over low heat with herbs and tomato concentrate.

Serve the meat with its sauce. The sauce can also dress pappardelle, with a little of the meat finely chopped.
