Two regional biscuit traditions

Italian regional records document more than one local form of savoiardo.

Emilia-Romagna’s traditional-food register profiles Savoiardi from the province of Reggio Emilia as biscuits made with eggs, sugar and white flour, and records their local use in zuppa inglese. The same regional register separately lists Savoiardi di Persiceto from the Bologna area. These entries describe specific local traditions, not one exclusive origin or a single formula for every product called savoiardi.

The biscuit in tiramisù

The Tiramisù World Cup’s original-recipe entry layers savoiardi after a brief dip in cooled coffee, then covers them with mascarpone cream and finishes with unsweetened cocoa. The Accademia Italiana della Cucina’s Veneto recipe describes the same coffee-dipped biscuit and cream layers.
