Baresana is a prepared table olive

A University of Bari-hosted study describes Baresana olives as Tèrmite di Bitetto fruit harvested at changing ripeness and preserved in brine. This table-olive preparation is distinct from generic green olives and from Ascolana olives. The baker’s focaccia barese recipe explicitly calls for olive baresane in salamoia.
