Vermentino di Gallura production follows strict DOCG regulations. The wine must contain minimum 95% Vermentino, with up to 5% other authorized white varieties. Harvest typically occurs in late August to early September, when Vermentino has achieved optimal ripeness while maintaining acidity. The grapes are harvested by hand, then gently pressed before transfer to temperature-controlled fermentation vessels. Fermentation occurs at low temperatures (14-16°C) to preserve aromatics, with some producers using stainless steel while others may use neutral oak. The wine must age minimum 3 months before release, with Superiore requiring 1 year minimum aging. The wine must achieve minimum 13.5% alcohol (Superiore) or 12.5% (standard) and pass quality controls.
