The grapes are harvested by hand, then destemmed and crushed before transfer to fermentation vessels. Fermentation occurs at controlled temperatures (25-28°C) with extended maceration on skins for 20-30 days, extracting maximum color, tannin, and structure. The wine must age minimum 30 months before release (12 months in wood), with Riserva requiring 37 months minimum aging (12 months in wood). Traditional producers favor large Slavonian oak botti, while modernists may use French barriques. The wine must achieve minimum 13% alcohol (13.5% for Riserva) and pass quality controls.
